Wild Mushrooms Baked in Phyllo

Ingredients:

  • 1 pound sliced wild mushrooms
  • 3 tablespoons extra virgin olive oil and additional for brushing
  • 3 tablespoons minced shallots
  • 1 tablespoon minced garlic
  • 2 tablespoons chopped fresh lemon thyme or thyme
  • 1/2 cup dry white wine
  • 1 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 and 1/2 cups freshly grated Parmesan cheese
  • 1 egg
  • 1/2 package of phyllo dough with approximately 28 sheets, cut in half creating rectangular sheets approximately 12"by 8"

Preparation:

Slice the mushrooms. In a saucepan over low heat, heat the olive oil and cook the shallots, garlic and thyme for about four minutes. Add the mushrooms and, stirring frequently, cook for about eight to ten minutes. Pour in the wine, add the paprika and mix well. Continue cooking until the liquids have evaporated.

Transfer the mushroom mixture to a bowl, add the salt, pepper, Parmesan cheese and egg and mix thoroughly.

Preheat the oven to 400 degrees Fahrenheit. Brush a baking sheet with extra virgin olive oil and set aside. Lay one sheet of phyllo dough on a work surface. Brush with olive oil. Place another sheet of phyllo directly on top of the first sheet and brush the second layer of phyllo with olive oil. Repeat this process until you have four sheets of phyllo brushed with olive oil and stacked directly one on top of the other. Place 2 tablespoons of the mushroom mixture in the center of the phyllo. Fold the phyllo edges over one another and close the packet. Brush the top with olive oil and place the packet with the flap side down on the greased baking sheet. Repeat this process until all of the mushroom mixture is used. Brush the top of the mushroom phyllo packets with olive oil and place the baking tray in the preheated oven. Bake for about fifteen to twenty minutes or until the phyllo turns crisp and golden brown. Serve immediately. This baked phyllo packet has a rich flavor, so it may balance a mild flavored entrée. These packets may also be served with luncheon salads, or as an appetizer before a multi-course meal.
