Tomato and Mozzarella Salad

Ingredients:

  • 6 vine-ripened tomatoes
  • 1/2 pound buffalo mozzarella
  • 1/2 cup shredded fresh basil leaves
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • Sea salt and freshly ground pepper to taste

Preparation:

Slice the tomatoes widthwise and lay the round tomato slices in a circle starting from the center of the plate. Slice the mozzarella into rounds of similar thickness to the tomato slices and arrange the cheese slices in between the tomato slices. Sprinkle the shredded basil on top.

In a separate bowl, prepare the dressing by slowly pouring a thin stream of the olive oil into the bowl with the vinegars, salt and pepper and whisk the ingredients together into an emulsion. Spoon the dressing over the rest of the ingredients and serve.
