Bread and Oil Salad with Tomatoes and Feta Cheese

Ingredients:

  • 3 large ripe tomatoes cut into cubes
  • 1 medium sized red onion, cubed
  • 1 cup black Kalamata olives
  • 1/2 pound Feta cheese, crumbled
  • 1/4 cup fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • Salt and freshly ground pepper
  • 8 oz thick slices Italian or French bread or dried toasts
  • 1/4 cup coarsely chopped mint

Preparation:

In a deep salad bowl mix together the tomatoes, the olives, the lemon juice, the olive oil and the salt and pepper. Mix once more and leave to sit for one hour. Just before serving add the pieces of bread and the Feta cheese and mix well. Garnish with mint leaves and serve.
