Tapenade

Ingredients:

  • 3/4 cup pitted black olives
  • 2 tablespoons large capers
  • 3 anchovy fillets
  • 1 to 2 crushed and minced garlic cloves
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper to taste

Preparation:

Finely chop the olives, anchovies and capers by hand or in a food processor. Stir in the garlic and olive oil. Season to taste with pepper. Serve with crusty fresh bread, pita bread, omelettes, fresh raw vegetables, fresh pasta and more!
