Sweet Oat Bran and Oatmeal Bread

Ingredients:

  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 3/4 cup warm water (about 110 degrees Fahrenheit)
  • 1-1/4 teaspoons salt
  • 1/4 cup oat bran
  • 1/4 cup wheat bran
  • 3/4 cup rolled oats
  • 2 to 2-1/2 cups unbleached all purpose flour
  • 1/2 cup warm milk (about 110 degrees Fahrenheit)
  • 1/4 cup pure maple syrup
  • 1/4 cup Romeu extra virgin olive oil and additional for greasing the bowl

Preparation:

In a small bowl, combine the yeast, sugar and 1/4 cup warm water. Set the mixture aside for about ten minutes to let it rise.

In the bowl of a kitchen mixer fitted with a dough hook, combine the salt, oat bran, wheat bran, oats and flour and mix well. When the yeast mixture has risen, pour the yeast mixture, remaining warm water, warm milk, maple syrup and olive oil into the flour mixture. When the dough is kneaded and easily pulls away from the sides of the bowl, put the dough into a bowl greased with olive oil, cover with a damp towel and let it rise in a warm, draft-free place for about an hour or longer until doubled in size. If the dough in the mixing bowl is too dry, slowly add a very small amount of warm water a little at a time until the dough becomes smooth. If the dough is still sticky and tacky, add a very little bit of flour a little at a time until the desired texture is achieved.

When the dough has doubled in size, re-knead the dough and place the dough on a parchment lined baking sheet or in a greased loaf pan. Cover with an upside-down stainless steel bowl or loosely with plastic wrap and let the dough rise again until doubled in size. Preheat the oven to 375 degrees Fahrenheit about twenty minutes before baking. Bake thirty five to forty minutes or until golden brown.
