Strawberry Sorbet

Ingredients:

  • 3/4 cup caster sugar
  • 3/4 cup water
  • 4 cups strawberries, cleaned and halved
  • 1/2 cup orange juice
  • Juice of 1/2 lemon
  • 2 egg whites
  • Whole strawberries and mint leaves for garnish

Preparation:

In a small saucepan over medium to high heat, combine the water and sugar and bring to a boil. Then reduce the heat and simmer for 10 minutes. Set aside and let the mixture cool.

In a food processor, combine the strawberries and orange juice and process. Add the sugar syrup and lemon juice and blend.

Pour the sorbet mixture into a 13 by 9 inch pan and freeze for approximately one hour or until partly set. Place the mixture in a food processor fitted with a steel blade, add the egg whites and process until smooth.

Return the sorbet mixture to the pan and freeze until it is firm. Using a large spoon, scoop the sorbet into small serving dishes garnished with strawberries and mint leaves.
