Spinach and Rice (Spanokoriza)

Ingredients:

  • 2 lbs. fresh spinach
  • 1/2 cup rice
  • 1/2 cup olive oil
  • 4 onions, chopped
  • 1 small bunch scallions coarsely chopped
  • 1 small bunch fresh dill finely chopped
  • 2 lemons
  • 1 tablespoon tomato paste
  • Salt and pepper

Preparation

Clean and wash the spinach. Pour water in a large saucepan and add a pinch of salt. When the water comes to a boil add the spinach. Allow the spinach to boil for 1-2 minutes. Remove the spinach from the pot and drain well, then press out the remainder of the water with your hands shaping it into a ball. Cut the spinach ball into 3 or 4 pieces and put aside.

Pour the olive oil into another saucepan and when hot, sauté the onion, stirring continuously with a wooden spoon. When the onion has wilted add the scallions and the dill sautéing until these are wilted too.

Add the spinach, the tomato paste dissolved in a little water, and salt and pepper to taste. When the spinach is soft add the rice, stir and then add the juice of one lemon.

Simmer until the rice is done. Put the spinach and rice on a platter and serve garnished with lemon slices or a colorful vegetable.
