Spinach Fettuccine

Ingredients:

  • 1 pound spinach fettuccine
  • 3 pounds vine-ripened tomatoes, peeled, seeded and diced
  • 2 cups freshly grated Parmesan cheese
  • 1/2 cup shredded fresh basil leaves
  • 1/2 cup extra virgin olive oil
  • 2 garlic cloves minced
  • Sea salt
  • Freshly ground black pepper

Preparation:

Combine the olive oil and the garlic in a small bowl and set aside. Cook the fettuccini in a large pot of boiling salted water and cook until al dente. Drain and transfer to a large serving bowl. Slowly pour the olive oil and garlic onto the fettuccine and toss lightly. Add the tomatoes, basil and one half of the cheese, and toss again. Season to taste with salt and pepper. Distribute the remaining cheese on top of the dish, garnish with basil leaves and serve immediately.
