Seviche of Fresh Tuna

Ingredients:

  • 1 pound fresh tuna (fresh salmon, scallops or sole may be substituted)
  • 3/4 cup freshly squeezed lime juice
  • 1/4 cup extra virgin olive oil
  • 6 scallions, minced
  • 3 tablespoons chopped fresh cilantro
  • 1 fresh chili pepper, minced
  • 1 teaspoon freshly ground black pepper
  • Radicchio leaves, washed and dried
  • Slices of lime and cilantro sprigs for garnish

Preparation:

Combine the ingredients in a glass bowl, mix thoroughly and refrigerate for 24 hours, stirring occasionally. On serving plates, arrange the seviche on a bed of radicchio leaves and garnish with lime slices and sprigs of cilantro.
