Ingredients:

  • 8 vine ripened tomatoes, seeded and diced
  • 2 medium onions, finely chopped
  • 2 garlic cloves minced
  • 1/2 cup fresh cilantro leaves, coarsely chopped
  • 1/2 cup Italian flat leaf parsley, chopped
  • 1/2 cup extra virgin olive oil
  • 2 fresh jalapeno peppers, seeded and minced (optional)
  • Sea salt
  • Freshly ground black pepper

Preparation:

Combine the ingredients in a bowl and mix thoroughly. Season with salt and pepper to taste. Refrigerate until ready to use.
