Salmon Mousse

This salmon mousse recipe can be made in minutes and is really delicious served with sliced French bread or crudite for a sunset picnic, or stuffed in hollowed out cherry tomatoes garnished with dill, or dolloped on sliced cucumbers for serving as hors d’oeuvres.

If you are not in a hurry, the salmon mousse can be put into a pastry bag, and then piped onto the food item you have selected in order to create a more aesthetic design.

Ingredients:

  • 8 oz. cream cheese
  • 2 oz. smoked salmon
  • 2 to 3 tbsp heavy cream
  • Few drops of lemon juice
  • White pepper to taste

Preparation:

Blend the cheese, salmon and cream in a food processor. Add a few drops of lemon juice and a dash of white pepper to the mix, blend again in the food processor. You can continue adding these last two ingredients a little bit at a time until the mousse suits your taste. Chill the mousse for thirty minutes. (If you are going to use a pastry bag, then soften the chilled mousse with a wooden spoon before putting the mousse into the bag.) Bon appetit!
