Salmon Fillets Sauteed with Vermouth and Lemon Juice

Ingredients:

  • 1 pound fresh salmon fillets
  • 10 tablespoons of extra virgin olive oil
  • 1 small garlic clove crushed
  • 1/4 cup chopped lemon thyme
  • 2 tablespoons chopped Italian flat leaf parsley
  • Juice from 1 large lemon
  • 1/2 cup vermouth
  • Sea salt
  • Freshly ground black pepper

Preparation:

In a large saute pan, heat the olive oil over medium-high heat. Place the salmon fillets in the pan and season with salt and pepper to taste. Turning once, saute for three to four minutes before adding the garlic, lemon thyme and parsley. Saute for an additional two minutes and add the lemon juice and vermouth. Saute for an additional two to three minutes or until the salmon is cooked. Serve warm.
