Garlic, Thyme and Rosemary Roasted Potatoes

Ingredients:

  • 3 tablespoons extra virgin olive oil
  • 2 garlic cloves, unpeeled (For those who enjoy garlic, the cloves can be peeled, crushed and minced)
  • 2 pounds small potatoes with the skin remaining
  • Sea salt to taste
  • 3 to 4 sprigs fresh rosemary
  • 3 to 4 sprigs fresh thyme or lemon thyme

Preparation:

Heat the oil in a large skillet over medium-high heat. Add the garlic, potatoes, salt and the sprigs of herbs. Cook for approximately 20 minutes and turn the potato mixture often with a wooden spoon, until the potatoes are browned all over and almost done. Reduce the heat to medium, cover the skillet and cook for an additional 5 minutes. Uncover and cook for an additional 2 minutes or until soft and tender when pierced with a knife.
