Garlic and Parsley Mushrooms

Ingredients:

  • 1 pound fresh Porcini mushrooms with caps, cleaned and sliced, caps included. Other mushroom varieties may be substituted.
  • 1/4 cup and 2 tablespoons extra virgin olive oil
  • 3 tablespoons chopped Italian flat leaf parsley
  • 3 teaspoons minced garlic

Preparation:

Heat 2 tablespoons of olive oil in a sauce pan over low heat and add the mushrooms. Sauté mushrooms for approximately 6 minutes without turning. Turn the mushrooms over and add salt and pepper to taste. Continue cooking until the mushrooms have released their liquid. Increase the heat to medium high allowing the liquids to reduce to near-evaporation, then lower the heat to medium-low, add the remaining olive oil, garlic and parsley, and mix with a wooden spoon. Sauté for an additional 2 minutes and serve immediately.
