Polenta

Ingredients:

  • 6 cups water 
  • 1-1/2 cups cornmeal 
  • 1-1/2 teaspoons salt 
  • 1 tablespoon extra virgin olive oil

Preparation:

Whisk the cornmeal into 2 cups of cold water in order to avoid lumps from forming. Pour the remaining 4 cups of water into a saucepan and bring to a boil. When the water boils, add the salt and the olive oil, whisk the cornmeal and water mixture again and pour the mixture into the boiling water, whisking vigorously until the consistency has thickened. Turn down the heat and cook the polenta stirring frequently with a wooden spoon, for 10 to 15 minutes or until the polenta is very thick and pulls away slightly from the bottom and the sides of the saucepan. Put the polenta in a buttered loaf pan. When the polenta is firm, slice it with a wet knife into serving pieces and fry it in a sufficient amount of olive oil or grill it on a very hot dry grill, until it is golden brown.
