Ingredients:

  • 1 loaf rustic Italian bread
  • roasted peppers
  • tomatoes
  • roasted aubergines
  • selection of salami
  • Parma ham
  • Mozzarella cheese
  • basil leaves

Lemon oregano dressing:

  • juice of 2 lemons
  • 5 tbs. olive oil, extra virgin
  • salt and pepper
  • 1tbsp capers
  • 2 cloves of garlic
  • 2 tbs. oregano

Preparation:

To make the sandwich, first take the bread and cut it horizontally so that you have a lid and a bottom. Scoop out the inside dough and use for croutons or breadcrumbs.

Brush the lemon dressing over the inside of the bread, be generous, then start layering the sandwich ingredients over the bottom of the bread, salami, roasted peppers, mozzarella, basil, Parma ham, aubergines, tomatoes etc and continue until all of it is used.

Next, place the lid on the bread and wrap in greaseproof paper, place a plate on top and weigh down with a heavy object and refrigerate until needed.

When you are ready for your picnic unwrap the sandwich and cut into wedges, re-wrapping each wedge individually. The sandwich can be made up to 24hrs in advance. The pressing and the dressing make the whole thing moist and delicious.

Whiz up all the dressing ingredients in a food processor and keep in a jar. It will last up to a week in the fridge.
