Orange Chocolate Truffles [Recipes Index] [World of Chefs] Ingredients:
Preparation: In a saucepan, bring the cream to a simmer, whisk in the chocolate until melted and well blended. Add the butter and orange peel and mix well. Put the mixture in a pan and put the pan in the freezer for about thirty minutes or until the chocolate mixture is firm and easy to use but not frozen. With a spoon, drop rounded tablespoons of the chocolate onto a baking sheet, spacing each one to keep the round shape. Freeze for thirty minutes. Then roll each ball in cocoa powder. Return to the freezer and leave until firm. Remove from freezer, keep refrigerated until ten minutes before serving. Spread raspberry sauce on a dessert plate, place a few drops of heavy cream on the sauce. Using the end of a metal skewer, put the tip of the skewer into each cream drop, drag it through the sauce to make a design of your choice. Place chocolate truffles on the sauce, garnish with mint leaves and serve.
