Marinated Chevre (Goat Cheese)

Ingredients:

  • 1 large jar with a spring top seal
  • 4 to 6 small, firm, fresh goat cheeses
  • Extra virgin olive oil
  • Sprigs of fresh thyme, rosemary and marjoram
  • 3 bay leaves
  • 2 whole, peeled garlic cloves

Preparation:

Pour a little extra virgin olive oil into the jar, filling it about one quarter full. Place the cheeses into the jar and cover with olive oil. Place the herbs in the jar. Seal the top and store in a cool, dark place for several days before serving to allow enough time for the cheeses to absorb the flavor of the herbs. If the jar is covered with a piece of your favorite colored cloth and secured with raffia, this marinated cheese jar makes a special gift to share with someone special.
