Hot (Cognac Flavored) Fudge Sundae

Ingredients:

  • 16 ounces of bittersweet chocolate broken into small pieces
  • 1-1/2 cups unsweetened cocoa powder
  • 1 cup and 2 tablespoons water
  • 1 cup light corn syrup
  • 1/2 cup caster sugar
  • 1-1/2 tablespoons instant coffee
  • 6 tablespoons very good cognac or brandy

Preparation:

In a pyrex glass bowl or a small stainless steel bowl over simmering water, melt the chocolate.

In a saucepan, combine the cocoa powder, water, corn syrup, sugar and coffee and bring to a boil. Stir constantly and simmer for one to two minutes, being careful to avoid burning the ingredients on the bottom of the pan. Remove from heat. Stir in the melted chocolate. Return to low heat until the fudge sauce is thickened to your desired consistency. Add the cognac or brandy and blend well. Pour over vanilla ice cream and serve.
