Herbed Parmesan Bread Sticks

Ingredients:

  • 1 packet active dry yeast
  • 1 teaspoon honey or sugar
  • 1/2 cup and 3 tablespoons warm water (about 110 degrees Fahrenheit)
  • 2 cups unbleached, all-purpose flour 
  • 1 teaspoon salt
  • 2 teaspoons dried thyme
  • 1/3 cup extra virgin olive oil
  • 1 cup freshly grated Parmesan cheese
  • Cornmeal (if using a baking sheet)

Preparation:

In a small bowl, combine the honey, yeast and 1/4 cup warm water. Stir the yeast mixture until blended and set aside for about ten minutes to let it rise.

In the bowl of a kitchen mixer fitted with a dough hook, combine the flour, salt and thyme. Mix the dry ingredients, make a well in the center of the flour mixture and add the olive oil. When the yeast mixture has risen, add the yeast mixture and remaining water and process. Using a spatula, scrape down the sides of the bowl and determine if additional water is required to ensure a smooth, elastic dough that pulls away from the bowl during the kneading process. At the end of the kneading process, add the cheese and mix and knead again to evenly distribute the cheese at this point.

Grease a bowl with extra virgin olive oil, set the dough in the bowl, cover with a damp towel and put the bowl in a warm, draft-free place to let the dough rise for about an hour and a half or until doubled in size.

When the dough has doubled in size, knead it again and divide it into 12 sections. Roll each one into a long "snake" and set on a baking sheet brushed with olive oil and dusted with cornmeal. (Or set the dough sticks directly in a perforated, non-stick breadstick pan, if you already have one). Make sure that each uncooked breadstick is equal in width so that the breadsticks will bake uniformly. (If uneven in width, some will be over-baked and some will be under-baked.) Cover with a damp towel, let them rise in a warm, draft-free place for thirty minutes to an hour. During this time, preheat the oven to 400 degrees Fahrenheit.

When the breadsticks have risen, bake for about fifteen minutes or until the breadsticks are golden in color.
