Preparation: Preheat the oven to 350 degrees Fahrenheit Rinse the chicken thoroughly and pat dry. Season the chicken with salt and pepper. In a bowl, combine the garlic, feta cheese, pine nuts and rigani. Stuff the chicken cavity with the cheese mix. Place the chicken in a roasting pan and pour the olive oil and lemon juice over the chicken. Pour in the water. Bake for approximately one hour until the chicken is tender and cooked, and the skin is golden brown. We recommend you serve this dish with Garlic, Thyme and Rosemary Roasted Potatoes.
