Honey-Apricot-Mustard Glazed and Barbequed Chicken

Ingredients:

  • 1 whole chicken, cut into serving pieces
  • 1 cup apricot preserves
  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 1/4 cup packed brown sugar
  • 1/4 cup apple cider vinegar
  • Extra virgin olive oil for brushing
  • 4 fresh apricots, pitted and sliced
  • Fresh Italian flat leaf parsley sprigs for garnish

Preparation:

Rinse the chicken pieces under cold running water, and pat dry. In a saucepan, stir the preserves, mustard, honey, sugar and vinegar over low heat until all of the ingredients are melted and well blended. In a glass baking dish or bowl, place the chicken pieces and most of the marinade, reserving part of the glaze for brushing on the chicken during the barbeque. Cover the glass bowl with plastic wrap and refrigerate. Occasionally turn the chicken pieces over in the marinade. Before grilling the chicken, allow the chicken to return to room temperature. Brush the grill with olive oil before placing the chicken pieces on the rack. Cover the grill and cook, turning the chicken pieces and basting with the reserve marinade frequently. When cooked thoroughly, transfer the chicken to serving plates garnished with fresh slices of apricots and fresh parsley.
