Ginger Prawns

Ingredients:

  • 2 pounds fresh large prawns, shelled and de-veined
  • 3/4 cup extra virgin olive oil
  • Juice of 1 large lemon
  • 1/3 cup soy sauce
  • 2 tablespoons honey
  • 3 garlic cloves, crushed and minced
  • 2 teaspoons grated ginger
  • 1 teaspoon ground marjoram

Preparation:

In a bowl, combine the oil, lemon juice, soy sauce, honey, garlic, ginger and marjoram. Add the prawns and mix and coat thoroughly. Cover and refrigerate for 24 hours, turning the prawns occasionally.

The day of cooking, prepare outdoor grill or pull out the grill pan for the stove.

Soak wooden skewers in cold water for at least thirty minutes, and thread the prawns on the skewers. Grill on a rack or grill pan brushed with olive oil. Cook the prawns over the hot coals or on the grill pan until the prawns are opaque, turning frequently to ensure even cooking. Garnish with lemon slices and marjoram sprigs and serve warm.
