Spanish Garlic Prawns

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves, crushed and finely chopped
  • 1 teaspoon red pepper flakes
  • 1 pound medium to large prawns, peeled and de-veined
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons sherry
  • 1 teaspoon paprika
  • 1 tablespoon Italian flat leaf parsley finely chopped
  • Sea salt
  • Freshly ground black pepper
  • Lemon wedges in a serving bowl
  • Lemon slices and parsley for garnish

Preparation:

In a sauté pan, heat the olive oil over low to medium heat, and add the garlic and red pepper flakes. Sauté for one to two minutes before turning up the heat to medium-high and adding the prawns, lemon juice, sherry and paprika. Stir with a wooden spoon and continue sautéing for approximately three to four minutes or until the prawns are cooked at which point the flesh will be pink and the prawns will be curled. Season to taste with salt and pepper and add the parsley. Serve garnished with lemon slices and serve a separate bowl of lemon wedges.
