Maigret's Game Biscuits

Ingredients:

  • 2 cups whole wheat flour
  • 1/2 cup dry milk powder
  • 1/4 cup brewer's yeast powder
  • 1/4 cup wheat germ
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1 garlic clove, minced
  • 2 tablespoons chopped parsley
  • 3/4 cup duck fat (or fat from the pan drippings of roasted pheasant, chicken, etc.)
  • 1/4 cup extra virgin olive oil
  • 1 egg, beaten
  • 1/2 cup ice water

Preparation:

Preheat the oven to 350 degrees Fahrenheit. In a kitchen mixer fitted with a dough hook, combine the ingredients and mix thoroughly. Add a little water or flour, as needed, to the biscuit mix in the event that the mix is too dry or wet. On a lightly floured work surface, roll out the biscuit mix creating a 1/3 to 1/2 inch thick spread. Using a cookie cutter (or a butter knife), cut out the desired biscuit shapes and place on a baking sheet. Bake approximately 20 to 25 minutes or until done. Remove from the oven, transfer to a cooling rack and store in an airtight bag.
