Rock Cornish Game Hens in Raspberry Marinade

Ingredients:

  • 4 Rock Cornish Game Hens
  • 2 cups fresh raspberries
  • 1 cup raspberry vinegar
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons minced fresh mint
  • 1 tablespoon minced shallot
  • 1 garlic clove minced
  • Grated zest of one lemon
  • Freshly ground black pepper
  • Fresh mint sprigs for garnish

Preparation:

Rinse the game hens in cold water and pat dry. Cut the game hens in half. For the marinade, puree 1 cup of the fresh raspberries and combine it in a glass bowl with the vinegar, mint, shallot, garlic, and lemon zest. In a thin stream, pour in the olive oil and whisk the ingredients together. Add the split game hens, turn them over to coat completely and cover the bowl with plastic wrap. Refrigerate 24 hours, turning occasionally.

The next day, remove the game hens from the refrigerator and allow them to return to room temperature. Prepare a grill which has a cover. Brush the rack with olive oil and place the game hens on the oiled rack skin side down. Cover and grill. Baste frequently and turn the hens over after about ten to twelve minutes. Continue basting and cooking for an additional fifteen to twenty minutes or until the juices run clear when pierced with a fork. Garnish the plates with fresh raspberries and mint leaves and serve the game hens immediately.
