Cherry and Kirsch Sauce [Recipes Index] [World of Chefs] Ingredients:
Preparation: In a saucepan over medium heat, combine the sugar and vinegar, stir and cook until it has reduced to 1/4 cup. Add the onions to the vinegar mixture and continue cooking until they are caramelized. Add the wine, bring the ingredients to a boil, reduce to simmer and cook until the liquid is reduced by one half. Add the cherries and their syrup, the orange juice, Kirsch, lemon thyme, cinnamon and stock. Simmer until 1 and 1/2 cups of sauce are left. Season to taste with salt and pepper. Serve with roasted duck.
