Cherry and Kirsch Sauce

Ingredients:

  • 2/3 cup red wine vinegar
  • 1/3 cup sugar
  • 20 pearl onions, peeled
  • 2 cups port wine
  • 24 pitted sweet black cherries in heavy syrup
  • 1 cup freshly squeezed orange juice
  • 3 tablespoons Kirsch liqueur
  • 2 sprigs fresh lemon thyme
  • 1/4 teaspoon ground cinnamon
  • 2 cups duck stock
  • Sea salt
  • Freshly ground black pepper

Preparation:

In a saucepan over medium heat, combine the sugar and vinegar, stir and cook until it has reduced to 1/4 cup. Add the onions to the vinegar mixture and continue cooking until they are caramelized. Add the wine, bring the ingredients to a boil, reduce to simmer and cook until the liquid is reduced by one half.

Add the cherries and their syrup, the orange juice, Kirsch, lemon thyme, cinnamon and stock. Simmer until 1 and 1/2 cups of sauce are left. Season to taste with salt and pepper. Serve with roasted duck.
