Brandy Marinade

Ingredients:

  • 2/3 cup dry white wine
  • 1/3 cup very good brandy
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup finely sliced mushrooms
  • 2 shallots, finely chopped
  • 4 bay leaves
  • 2 teaspoons chopped fresh lemon thyme
  • 1 garlic clove crushed and minced
  • 12 crushed black peppercorns

Preparation:

Combine all of the ingredients in a small bowl. Cover and refrigerate overnight to allow the flavors to blend. Ready for use (strain liquid, if required for your use).
