Black Olives in Citrus Marinade

Ingredients:

  • 2 cups drained black olives
  • 1/3 cup extra virgin olive oil
  • 1/4 cup freshly squeezed orange juice
  • Zest of 1 orange
  • Zest of 1 lemon
  • 3 garlic cloves, minced
  • 4 bay leaves

Preparation:

Combine the ingredients in a glass bowl. Cover with plastic wrap and refrigerate for at least 24 hours. Stir occasionally. Before serving, allow the olives to return to room temperature.
