Avocado Salad with Lemon Basil

Ingredients:

  • 2 avocados, peeled, pitted and diced
  • Juice of 2 lemons
  • 1 large, ripe tomato, peeled and diced 
  • 1/4 cup shredded fresh lemon basil 
  • 3 tablespoons Romeu extra virgin olive oil 
  • Sea salt and fresh ground pepper 
  • Purple or green ruffles basil (or substitute butter lettuce leaves) 
  • Freshly grated Parmesan cheese to taste

Preparation:

Put the diced avocado in a non-metallic bowl and thoroughly but gently toss with the lemon juice. Make sure the avocado is completely coated so the avocado does not discolor. Add the tomato and basil to the bowl, then drizzle the olive oil and toss lightly. Season to taste. Put a layer of ruffles basil on a plate and top with the avocado salad. Sprinkle freshly grated parmesan cheese on top.
