For the apple filling:
Preparation: For the pastry: Dissolve the yeast and 1 teaspoon of honey in ¼ cup warm water. Mix and set aside for about ten minutes to let it rise. In a kitchen mixer fitted with a dough hook, combine the flour and salt and mix thoroughly. Make a well in the center of the flour and add ½ cup of olive oil and ½ cup of honey. When the yeast mixture has risen, pour the yeast mixture and one half cup of the water into the flour and process with the mixer fitted with the dough hook. Add additional water very slowly only if it is necessary to achieve the desired dough texture so that the dough pulls away from the side of the mixing bowl and is smooth and elastic. Place the dough in a bowl greased with olive oil, cover with a damp towel and allow it to rise in a warm, draft-free place for at least one hour or until doubled in size. For the apple filling: Combine the lemon juice and sliced apples in a bowl. Melt the butter in a saucepan over low heat. Add the apple slices, sugar, salt, cinnamon, nutmeg, vanilla and Calvados. Stir the ingredients until well mixed and cook for approximately 20 minutes or until the apples are soft but not falling apart. Remove from heat and set aside. After the dough has risen, preheat the oven to 375 degrees Fahrenheit. Brush olive oil on a rectangular baking sheet. Roll out the dough with a rolling pin into a rectangular shape about 1/8 inch thick. Place the rectangular dough on the baking sheet. Extra dough will hang over the edges. Arrange the prepared apple slices on the dough, drizzle with ¼ cup of the olive oil and ¼ cup of the honey. Bring the overhanging dough up over the apple slices, covering them completely. Press to seal. Brush the remaining olive oil over the top of the dough and sprinkle with the brown sugar. Bake until the dough is golden brown, approximately 45 minutes to one hour. Serve hot.
