Aioli Sauce

Ingredients:

  • 1/2 cup extra virgin olive oil
  • 2 egg yolks
  • 1 teaspoon fresh lemon juice
  • 5 garlic cloves
  • 1 teaspoon water
  • Sea salt
  • Freshly ground white pepper

Preparation:

In a bowl, mash the garlic cloves with a pestle. Slowly whisk in the egg yolks. Slowly pour the olive oil in a thin stream into the egg mixture and whisk while pouring to create an emulsion. Combine lemon juice and water and whisk this into the olive oil and egg mixture until well blended. Season to taste with salt and pepper.
