A world united by a passion for tradition, nature and
the art of producing one of the most important food
staples of mankind. Regardless of the culture to which
one belongs in the world, every one of us shares the
farmer in our ancestry. We all carry in our hearts that
special love for the land and the olive tree.
You recognize the olive tree farmer because he carries
the gifts and the burdens of nature in his eyes, his
limbs and his movements. When I was growing up in Greece,
I always looked up to these "big" people who
challenged and, in return, were challenged by the Earth
and nature. I remember from my childhood the times I had
the opportunity to share a meal with them and I vividly
remember my fascination with their hands - big, strong
hands full of life lines that moved over the table like
angel wings. In memory of these heroes of my youth and in
honor of those who continue this noble tradition, I would
like to dedicate this section in the hope that their work
will be more widely recognized, understood and
appreciated.

 My
great grand father, a farmer and fisherman, was one of
the people who challenged and were challenged by the
Earth and nature.
